Legendary Celebrity Chef Paul Prudhomme, Dead at 75 Yrs!

Paul Prudhomme: Cajun spices and a love of local ingredients

It is with great sadness that I announce that legendary Celebrity Chef Paul Prudhomme passed away this morning after a brief illness, he was just 75 yrs old. Paul became famous in the 1980s teaching everyone who would listen and taste his amazing Cajun cooking that he learned from his mother. Paul never attended culinary school, he learned at his mother's knee like a lot of good chefs, and in the 1980s after working his way up through the ranks he became head chef at the legendary New Orleans restaurant the Commander's Palace, (one of the oldest and world renown restaurants in New Orleans). And after attaining the head chef position, Paul and his wife opened K-Paul's Louisiana Kitchen. And soon after it opened it became a huge success and people would stand in line for hours just to get a seat there and eat his amazing cooking. One of his best selling dishes was blackened red fish. This dish  became so popular in New Orleans that the State of Louisiana had to create regulations on who and how many red fish could be caught each day, so that the fish would not go extinct. Yes, it was THAT popular. Paul was a little guy, just barely 5 feet tall, but at one point, he weighed a whopping 580lbs. And after awhile, he was confined to using a motorized chair just to get around because of the excess weight and a bad knee. But thankfully, in the 2000s he dropped his weight down to just 200 lbs. Unfortunately for Paul, though he still had the bad knee so he kept the motorized chair and he sometimes had to use a cane to get around. I used to love watching his cooking segments, he was quite the character, always had a joke or 2 and made really amazing looking dishes. Paul is survived by his wife of many years and several children too. Rest in peace Paul.
